Saudi Culinary Arts Commission Reveals Regional Dishes for All 13 Provinces
The Saudi Culinary Arts Commission has designated traditional dishes for all 13 provinces as part of its National and Regional Dishes Narratives initiative.
Al-Margaouq is Riyadh's signature dish, while Saleeg represents the Makkah region. The initiative underscores each province's unique culinary identity and aims to honor and promote Saudi culinary heritage locally and globally.
Key dishes include Madini rice in Madinah, Al-Mulayhiya in the Northern Border Region, Al-Bukayla in Al-Jouf, Muqana bread in Al-Baha, Keubaibat Hail in Hail, and the wheat-based Al-Ruqsh in Najran. Al-Qassim is known for Al-Kleja, the Eastern Province for Hassawi rice, Jazan for the stone pot-cooked Al-Maghsh, Tabuk for Al-Sayadiah, and Asir for Al-Haneeth.
These regional dishes, identified through expert committees in alliance with local emirates, encapsulate cultural value, history, and regional food culture while bolstering local economies. The initiative kicked off in January 2023 by labeling jareesh as the national dish and maqshush as the national dessert.
Through celebrating culinary diversity and investing in regional dishes, the commission seeks to document and share recipes, thereby preserving them as an integral part of the Kingdom's cultural legacy.
It aims to spotlight traditional Saudi cuisine, which is renowned for its distinct flavors and Arab authenticity, and to ensure its transmission to future generations.
